In the chaotic dance of moving houses, my pots and pans have decided to play hide-and-seek. From misplaced spices to misplaced enthusiasm, I found myself ordering ordering take outs or simply eating out more often than not this last week. But fear not, for even in this chaos, I'm determined to keep hitting you up with quick and easy recipes that are perfect for those days when time seems to slip through our fingers.
All I can manage at the moment and all I actually crave for is fresh and simple food that can be prepared in under 5 minutes. Obviously, we will not be compromising on flavour!
I’m almost embarrassed to be writing a recipe for this watermelon salad, but it’s so satisfying it’s definitely worth sharing with you. The prep time is short, the flavours are strong, you’ll be hooked in no time. Although, I think this recipe might be liked marmite, you’ll either hate it or love it. The combination of sweet watermelon and saltiness from the soya sauce and fish sauce works like a treat in my eyes. Shall we also mention the fact that there must be about zero calories in this dish…not that we’re counting but it is summer after all!
Thai watermelon salad
Prep time: 5 mins
For 2 people
Ingredients
3 large slices of watermelon
1 lime, juice squeezed
A handful of nuts (peanuts preferably but anything with a crunch will work)
1 tbsp Light soya sauce
1 tsp fish sauce
Handful of mint, picked
Handful of coriander, picked
1 spring onion, sliced thinly sideways
Instructions
Hmm…where to start.
Cut the watermelon into uneven pieces, getting rid of the rind.
Add soya sauce, fish sauce, lime juice.
Top with herbs, nuts and spring onion.
Et voila!
